The ingredients are personally procured by the kitchen daily, and from local sources, prepped then cooked over a traditional charcoal stove. Weaving in modern techniques into our cooking rewards us with the desired consistency and enlivens the dish with additional visual flair, accentuating flavours that are unique yet familiar at the same time.
